Nigori-sake or ‘cloudy sake’is usually guaranteed to offer a unique drinking sensation, and Tsuki no katsura Junmai Nigori-sake is no exception. It is not pressed to remove particulates in the same way as regular sake, and is bottled at just the correct stage of fermentation to provide a multi-layered fragrance with fruity tones, combined with a complex yet refreshingly crisp taste.

The finest Yamada Nishiki and Yume Nishiki sake rice from Hyogo
prefecture is milled to perfection to produce this top quality ginjoshu, which even among other ginjoshu varieties displays an outstandingly light and dry character. It combines a fruity, yet slightly tart aroma, redolent of lemon, pineapple and orange, with a taste that offers the perfect balance between the soft flavour of the rice and a pleasingly crisp finish.

Two Japanese sake makers from Yamaguchi will represent the special sake night at Kirakuya, the best and only jizake sake bar in New York City on September 13th, 2011.


The presidents of sake companies in Yamaguchi in Japan will exclusively introduce their unique local sake that will be paired with exquisite Japanese dishes deliberately crafted by executive chef at Kirakuya. Yamaguchi is known for its perfect geographic condition, rich soil and climate, to cultivate genuine characteristics of its sake.


Up-close personal experience to authentic Yamaguchi local sake by direct interaction with sake makers at ‘Yamaguchi Sake Night’ at Kirakuya sure will open the door for you to another dimension of sake culture.


Two exclusive sakes selected to be served at the event are;


‘Moriko,’ Aroma Daiginjo, and ‘Harada,’ Junmai Daiginjo. ‘Haruda’ is making first American debut at Kirakuya.


These novelty sakes are extremely rare brewed only with small number of limited edition in Japan.

Jizake

Jizake, Fine Artisan Sake, literally means “local or regional sake” that is produced by microbreweries, mostly in remote countryside of Japan. The geographic locations give birth to diverse flavor characteristics that is impossible through mass production.


Most of this sake breweries persist in utilizing their traditional ways to produce sake relying on ‘Toji,’ the experienced brew-master to continue their legacy. Becoming ‘Toji’ requires experience, management skill and most of all dedication as an artist.
